Michael Sichel | Executive Chef

Chef Michael Sichel, New York native and CIA grad, first job was in the kitchen of New York City’s legendary Gotham Bar and Grill and he credits its pioneering Chef Alfred Portale as his most influential culinary inspiration.   

Sichel’s mother’s family immigrated to New York from Reggio Calabria, the coastal city in southern Italy, in the early sixties and he recalls his childhood experience in their kitchens as an immersion in Italian heritage, ingredients and family style cooking.

On a referral from Portale, Sichel headed West, earning a spot during the startup phase of Drew Nieporent’s San Francisco blockbuster restaurant Rubicon with Rising Star Chef Traci des Jardins at the helm and Master Sommelier Larry Stone at the front.  During ground zero of the farm to table movement, the environment provided stellar tutelage in product, technique, and creativity.

A two-year stint followed in the hills of Southern France at L’Abbey de St. Croix Relais Chateau, Provence, where the education was as much about precision and presentation as lifestyle.

Sichel returned to the US, winning a coveted internship with World Pastry Champion Chef En-Ming Hsu of The French Pastry School at the Ritz Carlton Chicago.  He also earned his qualification as Certified Sommelier through The Court of Master Sommeliers.

In Napa Valley, the New World’s most exciting intersection of food and wine, he honed culinary style and pairing skill under the leadership of Rubicon vet Chef Richard Reddington at Auberge du Soleil, Relais Chateau.

On his initial foray as chef-owner, Sichel opened New Orleans beloved Restaurant Indigo, a sad casualty of Hurricane Katrina.
