Head Sushi Chef: DJ McKracken
SUSHI
Chef DJ was born in Texas and raised in Northwest Florida. He started in the restaurant industry at the Fish House as a busboy and was eventually promoted to server/prep for sushi. After excelling in his position, he was sent to an affiliate restaurant for training in "sushi rolling" under an experienced local sushi chef.
He went on to roll sushi for six years. After a brief hiatus from sushi, he continued his culinary journey by returning to the Old Florida Fish House in 2017 as head sushi Chef.
With new ownership in 2018, Chef DJ was encouraged to seek out the highest quality sushi ingredients available. This allowed DJ to provide Fish House customers the best sushi on the Emerald Coast. DJ scours the planet for the best food ingredients available, including deep water Blue Fin Tuna from the Mediterranean and Japan, Salmon from New Zealand, Uni and Scallops from Japan, and A-5 Wagyu beef from various prefectures in Japan.
